Granola Stuffed Strawberries

Today's simple recipe comes courtesy of my 4-year-old. Homemade granola is a staple in our house. We all love it for snacking and breakfast, and homemade is much lower in sugar than store-bought. The other afternoon while B was having her snack, I noticed her happily pouring her granola into the centers of her strawberries. What a great idea! The past few days the girls and I have been enjoying her creation placed in a bowl of yogurt for a fun gluten-free breakfast or after-school snack.
 
 Yummy Hubby Santa likes to leave kitchen gadgets in my stocking at Christmas. Last year he left this strawberry huller he found at Williams-Sonoma. I will admit I initially thought this was a silly tool and would have never bought it for myself. But it has turned out to be a great little gadget - the kids love having the tops off their strawberries and it is even quicker than using a knife. Plus it's fun to do and leaves a perfect cavity for filling with delightful things like whipped cream and granola.
The girls absolutely love making and eating this. I can't blame them... it's totally delicious and much more interesting than a typical bowl of granola.
This recipe works best with big strawberries. The teeny tiny cute-as-a-button ones from our garden would not work here.

Granola Stuffed Strawberries 

1 pint large fresh organic strawberries  
1 cup granola (see my homemade recipes here and here)
1 cup favorite yogurt (I like Greek yogurt with a little drizzle of agave syrup)

Using a paring knife or strawberry huller, remove tops and hulls of strawberries. Fill centers with granola and place in a bowl filled with yogurt.
